Here are the pictures of "Canning Day" at Mama Peacock's house.
That was 16 Pounds of Apples I was in charge of peeling and slicing... needless to say that my poor little hand was very stiff and sore. I personally thought there should be a picture of my hand at the end; it was so cramped up I couldn't even open it up to let go of the knife... but my mother, loving as she is, thought there was no reason for me to post about what a "whiner" I am.
While claiming "arthritis" for the peeling bit, she did get into the action when it came to seasoning.
I just love her hands. There is something magical about all those wrinkles that she won cleaning, cooking, loving, and caring or us.
At any rate, we peeled, boiled, mashed, and canned our way to Apple Sauce and Apple Butter, and let me tell you, it was worth every minute.
I love Fall!
Now we just have to wait for the cool weather.

Um...I feel silly for not realizing you had a blog. Anyway, the canning looks like it went fabulously. If I buy everything we need, will you and Cathleen teach me to can while you're here???
